How does one do this.

I can change the watch faces using watchtimes but I'd like to do this with the action button so I can use...

Stopwatch in the morning for timing grinding my coffee beans
Workout for mid morning or afternoon
Evening shortcut countdown for timing my cold shower
Night time torch for going for a p1ss to avoid tripping over the cat or falling head first down the stairs.

Help welcome

Use the Action button to trigger a shortcut. In that shortcut, query the time of day and then based on the time perform those actions.

I haven't tried it but that's how I'd do it. It's an interesting idea!

I use a 24 hour clock so just queried the first two digits of the time for hour by hour granularity. I think this would work? In my simple test it correctly picked the timer vs flashlight.

You can then use an "Otherwise" to capture a default action.
