So I currently own airpod pros and macbook air m1 and a mini m1. There is something weird I've noticed which I'm not sure if its normal. When watching say a youtube video in a browser, if I click another video or click the youtube logo on the top left to goto the youtube homepage, the audio gets cut unevenly from the airpod pros. Sometimes the audio stops in the left airpod first then the right and vice versa. Its not a huge gap but its noticeable. Is this normal behaviour?

Yes this is normal. Or at least mine do it as well. There’s a bit of latency ie delay with Bluetooth so it takes a fraction of a second or so to sync up both the left and right ear so the sound comes out at the same time.
