Here is the situation:

Person 1 has an email address.

Person 2 has an itunes account and uses person's 1 email address for it (with their permission, of course).

Person 2 later changes the email address on their account to their own email address.

My question is if person 1 then sets up their own itunes account using their email address, will it cause any issues since the email address was previously associated to someone else's account?

Well then. I think there should be of no issue at all if changing email address is still possible. As long as both addresses can be accessed, there should be no problem.

Not having done this, think might run into some problems.

Generally, will want Person 1 to sign-out any devices tied to the current account out of iTunes (deauthorize) and iCloud before doing anything. At that point, you can change over the iTunes account to Person 2 address. But anything "purchased" on the iTunes account will no longer be available to e-mail address #1.

If Persons 1 & 2 are related, maybe setting up Family Sharing is the way to go, to maintain shared purchase history, but have own text messages, calendars, contacts, etc.
