So in my family of 3 (me, wife and son) we share Apple Music, and each of us have an iCloud account. All paid on one card.

If I wanted to switch us to Apple One, do we split the 2TB of iCloud amongst us 3? And is it separate, as in I can't see my son's iCloud account and vice versa? If I switch us, does it automatically update everyone else's account or do they need to sign back in?

As I recall, it was seamless. Your accounts remain separate (you can't see your son's account and vice versa) but everyone shares the 2TB. I think you invite members to join the plan and they accept.
