I'm looking to mirror my main drive to a second drive in the system, just in case. Is this possible with the software RAID setup that Apple includes (even on a boot drive), or will that slow down the system?

Yes, your boot drive can be an internal RAID volume. I just set mine up with 4 drives in a RAID-10 configuration. It's been running in the new mode for less than 24 hours but seems to be working great.
