anyone know how to do this?

(ie. i'm typing in "to:" and it suggests certain e-mails..) is there a way to remove a couple?

oh, another question just came up:

my university outgoing e-mail server isn't working now, so apple mail suggested i try sending with my smtp.gmail.com server... and it worked. how was my uiuc account able to send through the g-mail server? and the e-mail still showed up coming from my @university.blahblah e-mail

Because your email address doesn't change or matter, your email is just being relayed by the gmail SMTP server. Think of the spam you get, foo@whatever.bar.org.. that's highly unlikely to be the "real" email address, but you get it none-the-less, becuase it's relayed. Same concept.
