Remove foreign fonts from system, Illustrator

Hi is there anyway to remove foreign / international fonts from the system, my Illustrator is a pain with the extra fonts, Ive tried to remove them with font book, it won't let me.

As Big Sur no longer receives updates, you can remove fonts as described here https://forums.macrumors.com/thread...tem-volume-as-writeable.2332937/post-30822017
But it’s a risky procedure and shouldn’t be attempted without backing up the system first.
