Apple TV Restoring a jailbroken ATV without updating?

Is this possible ? I've an apple TV on 5.0.3 jailbroken. I want to restore the thing but not update the firmware so I have the option to jailbreak at a later date if needed?

Any ideas I'd this is possible

You can only restore it to that firmware if you have the SHSH blobs for that firmware for that device.

Even if you didn't save any blobs you can pull your current ones using iFaith and you'll always be able to restore to 5.0.3 in your case. Keep in mind you'll need to keep around an older version of iTunes too since the updated ones don't allow restoring old firmware.
