Charging while in use nailed it, thanks! Unplugging should resolve it or simply waiting for it to cool?

Unplugging should not make any change as the heat inside the device is not gone when unplugging.
You should simply wait 10-15 minutes.

this happens frequntly with my iphone 7. i can be in bright daylight, auto brightness off, and i can actually watch the brightness slider drop in control centre to complete minimum brightness. it does not seem to be connected to the phone getting hot (nor do i live in a particularly hot climate) so overheating never occurred to me. it also happens so often it wouldn't be saying much about the phones ability to avoid overheating.
