Does anybody know if the search within the new Notes.app can find unchecked checkboxes?

Yes it does and the check status does not change the output of the search.

Thanks. So, does it mean that I could search for "unchecked to-dos" and get all notes in which I still have to do something, or only look for notes with checklists, done or not?

Notes app only does a simple full-text search, there's no filter available. It will return all notes that that matches your search term, checklist makes no difference, it ignores it completely. It's not a dedicated task manager like other apps.
