I am about to move a bunch of clients to a new mail server. Since my clients aren’t very tech savvy, it would be nice to have some kind of Script that creates the Mail account for them, only assigning the account (email address) and password.

A quick search didn’t find any such thing.

Do you guys have any suggestions?

You could use configuration profiles (.mobileconfig)

So, I have taken a look at this now. The problem with profiles is that it differs from normal ways to add and interact with an email account. Eg, it's not possible to delete the account no other way than to delete the profile. That makes it awkward and strange for my clients.
However, it may still be the better choice. Time will tell.
