Trying to FINALLY update because I'm currently running Mac OS X Version 10.7.5

But keep getting this message: Software Update doesn’t have any new software for your computer at this time. Obviously I know there ARE updates available....so I'm stuck. HELP!

The App Store only lists updates for the current OS that is installed. The only current OS is macOS Sierra in the App Store.
What OS did you want to install? Which Mac model and year do you have to determine what OS will work for your Mac?

Your 2011 MBP will support Lion (10.7), Mountain Lion (10.8), Mavericks (10.9), Yosemite (10.10) El Capitan (10.11), and Sierra (10.12).

Mountain Lion can still be purchased from Apple for $19.99 (I can get you a link if you need it). Mavericks (10.9), Yosemite (10.10) & El Capitan (10.11) would have to been downloaded (Purchased) from the App Store before late September 2016 to be available for download from the App Store. Sierra (10.12) is currently available from the App Store. Some people have complained of slower performance with a newer OS (Mavericks (10.9), Yosemite (10.10), El Capitan (10.11) and Sierra (10.12)) using the OEM spinner HD. If that is a problem then installing a SSD will make your MBP feel new.
