Hi

How do I get Spotlight show American English dictionary search results? I have tried everything I've read online. Please see how my settings are in the pictures. Thanks so much if you can help with this!

So if the top entry is Chinese (com.apple.dictionary.zh_CN-en.OCD) , perhaps that's your culprit. Does changing your region change what spotlight uses as its dictionary?
