Is it possible to run Stage Manager on an iPad Pro without the dock visible to get some extra space? And only make the dock visible when moving cursor down to initiate it?

Yes. Go back to where you turn stage manager on/off and hold down onto the option. A pop up box should appear and you can select/deselect dock visibility.

If you turn off the dock in stage manager can you temporarily bring it up by swiping from the bottom or using the keyboard shortcut CMD + Option + D

Yes, I just tried. It’s possible by bringing up via the shortcut.
