iPhone SE (2016) Stop iPhone connecting with Mac Desktop Computer.

I have recently purchased an Apple SE2020 iPhone which straight away completely scrambled all my Mac Ventura version 13.3.1a computer Bookmarks in Safari and also deleted others. Then I tried to un-sync my iPhone from iCloud because I wanted to delete all the Safari Bookmarks from it. Then I found that the un-sync did not work and I have now lost all the bookmarks on my Mac.
Can anyone please tell me how I can stop my iPhone from controlling my computer?
