I moved last December from the US to Zürich, Switzerland. My first iPhone season here.

Back in the US there many sites that I can send in my iPhone for trade-in. I would get a good deal for trade-in than with Apple. What are my options? Do those sites exist? I assume no trade-in sites in the US may take my iPhone 11 128GB and my wife’s iPhone X 64GB?

eBay is okay and other options but I prefer as hassle free as possible. Any options?

having lived there a while before moving back south:

Try the marketplace plattforms tutti.ch and ricardo.ch.
Also compare prices from digitec.ch and other sellers to get an idea about the price range.

secondhand upper tier iPhones in good condition can still give you quite a sum of money.
Good Luck and do not ship/handover your device before you have received payment!

otherwise walk into the App store in the Zurich Bahnhofstrasse, not sure you can trade them in there tough (don't know if it's an US thing only or globally)
