since it kept saying installing, is it ok I turned off my phone and turned it back on and did it manually? It shouldn't affect future automatic updates for apps?
It's been happening at times for various people with iOS 9 in particular. Usually restarting the phone will help with it all, as was the case in your situation. Nothing else would be affected by it and everything will continue working fine as it did before.
