iPhone 13 Pro Max Two carriers, how do I set main one?

Traveling in the US from Italy I added an AT&T eSim, disabled roaming on the Italian one but when I try and make a call it seems the Italian one being the 1st option so I had to disable it totally, no big deal as I can still getting texts and WhatsApp on the Italian number through the US carrier but wondering if there is a way to tell my iPhone to use one carriers rather than the other as to have bot sims enabled

Using Dual SIM with an eSIM - Apple Support (IN)

Set up and use Dual SIM.

It happens „per contact“. If someone calls you on the italian number, then calling out this number is used too. Change it on top of the dialing screen. There you can choose, what line should be used. General change in the settings of that SIM.
