Anyone experienced this? So essentially it just continues to say “sending” in my inbox and it’s really annoying.

Have you tried deleting it from another device (iOS device, Mac, or iCloud.com) and then maybe force-closing the mail app on your iPhone or rebooting?

Sorry my bad - misunderstood. Can you get rid of the email by just deleting it? Have you had any issues with that account in the past?
No as I said in my OP it won’t let me delete it. Never had this issue before.

Attachment may be too big, recipients mailbox could be full, number reasons emails fail. Delete and try again.
I run my own email server for several clients, I even have problems once in a while.
