@redheeler got there before me. :)

The base Mini does appear to have the i3-8100 judging by the base clock and turbo. The top SKU has the i5-8500 while the i7 option is the i7-8500. I guess the i5-8400 with base clock of 2.8GHz wasn't good enough up against high clocked i3.

It is hard to know, because both mobile and desktop Coffee Lake CPUs have same specs.

There is not a mobile i5 with 6 Cores though. Only the desktop class i5's have 6 cores.

Oops, correction again. There is i5 8500B with 6 cores.

It's probably 8100H for i3 and 8700B for i7.

But guy in the keynote said that Mac Mini does not use mobile CPU. Then the only option are 8100 and 8700.

Um I know you said closed. But none of those cpu's say they can run a 5K screen and as far as I know the only GPU in the new mac mini is on the CPU, and the Mac Mini says it can run a 5K screen at 60hz.
The Intel specs state 4096x2304@60Hz max, but three displays supported. This matches what is under "Up to three displays" on the Mac mini specifications page.

It won't be able to handle three simultaneous 5120x2880 displays, so that is likely why 5K wasn't mentioned in the Intel specifications.

That's generally been the distinguishing feature for the i7 vs i5 since the start of the Core i launched
the Intel Core i5-8259U in my 2018 mbp also has HT ... well a mac mini w/ 12 threads is actually pretty drool worthy - probably have to wait until the reviews to find out which i5/i7 they put in there as Apple likes to modify Intel chips..
