I am sure it would require me to put in some info and confirm on my phone if I want to do this right? If I don't want anyone who's on my Mac to see my iMessage and SMS conversations?

Tell me there is a way to make that NOT happen...

Now, If I choose to not have my iMessage and SMS on my Mac can I still get calls on it?

Just disable it and you'll be good.
The app messages has been built in OS X since Lion, so if you have 10.7 or older you already have messages.
