This is a very tough decision for me because I was only able to experience 6.1.x on the iPhone 3GS.

I went with 7.1.x because it was a slightly better experience on my 5s than 6.1.x was on my 3GS.
3GS to 5S is just enough to compensate the UI smoothness drop from iOS 6 to iOS 7+.

iOS 8.1.2 on my 6+ is great. iOS 7.1.x and iOS 8.1.2 on my 5s worked well too. I never liked iOS 6 in any incarnation. The UI was just stale and ugly.

I remember iOS 4.1, 4.2 and especially 4.3 being rock solid on my iPod Touch 4.

iOS 7.1 on my iPhone 5 was amazing!

My iPad 2 also ran iOS 5,6 and 7.1.2 like a champ.

For ipad mini 2, ios 7.1.2 was almost perfectly smooth, but of course older ipads like ipad 3 and 4, there were occasional stutters here and there.

I really miss ios 7.1.2 on my ipad mini 2. :(

"Latest iOS 8.1.x is absolutely fine and smooth on my 6+"

It is so totally amazing how many of these types of comments we see.
btw: I have peers with 6/6+ and have fun showing them issues on their devices. The two most common phrases are "I didn't notice that" and "oh yeah. I just did this ..."
