Carrier Will a Verizon store do a side by side transfer? I don’t have the iCloud space to back up

If I upgrade at a Verizon store will they let me do a transfer without iCloud? iCloud is only 5GB and my phone is currently almost 100GB.

Or is there some temporary iCloud backup I can do just to transfer to the new phone?

Or, do backups still happen on iTunes (Windows)
