I have several hard drives in caddies that I occasionally use in my 2010 MacPro. Will I be able to access this data? (It will be prohibitively expensive to transfer everything to SSDs.)

My other option will be to go to a dual boot system.

I wonder what my options will be for the new MacPro.

From what I read, it was designed for SSDs and hybrid drives could only be used after a long conversion process. Something about the new file system.

There's a new file system included in High Sierra called APFS, which all full-SSD Macs will get converted to after upgrading. HDD Macs will just use HFS+ as they always have, and will be able to read and write to both APFS and HFS+ drives with no issues.
