Quick! You're trapped on a metaphorical desert island where for whatever reason you can only download five apps (not including the standard pre-installed Apple apps). What would download?

Mine:
Day One: It keeps my day in check, and I can look back on the week with accuracy.
Evernote: If it's not a journal, its a quick list or business notes.
Yummly: Gotta eat, right? Besides, it also acts as my grocery list.
Netflix: Self explanatory, I think
Bill Guard: Credit Check and Budget keeper - I'd be broke without it.

So what apps could you not live without or use daily?

OK, focussing on your last question and ignoring the obvious problems a) not needing banking, maps, etc., b) needing entertainment and survival guides as a major priority and c) using websites instead of apps so you could save your allocation for other apps, AND assuming you had the Apple iPhone weather app which for some stupid reason is not available on iPad, mine would be:

Google Maps
Gmail
Guardian, BBC and local news apps

I use Apple TV for YouTube and Vimeo.
If I could only have one game it would be Super Stickmam Golf.
I use some specialised apps such as Rode Record which are essential but not for the masses.
