15.7.3 is likely not applicable to iPhone 8 and later models.

For these devices, you can still get 15.7.1 public release via delayed OTA, or 15.7.2 RC via beta + delayed OTA profiles now.

If 15.7.3 can be installed on iPhone 8 and later models, I will post a guide after verification.

EDIT:
After verification by many members, Apple does not prepare iOS 15.7.3 firmware for iPhone 8 and later models, so there is no way to install 15.7.3 to these models, 15.7.2 is still the last iOS 15 they can get now.

EDIT2:
The iPhone 8 and iPhone 8 Plus can install iOS 15.7.3 and any version of iOS 15 after that through an imperfect workaround (read more). Because the iPhone 8 series and the iPhone 7 series share the same firmware, just not signed by Apple.

For iPhone X and later devices, unless there is a new law requiring Apple to continue to provide security updates on iOS 15, there is no chance of upgrading to iOS 15 higher than 15.7.2.

I removed the modem firmware references in this WIKI for iPhone 8 and later models because there is no 15.7.3 available for those models.

iOS 15.7.3 is only available for iPhone 6s (all models), iPhone 7 (all models), iPhone SE (1st generation)

iPadOS 15.7.3 is only available for iPad Air 2, iPad mini (4th generation), and iPod touch (7th generation)

Well, I installed it on my 6s. Weirdly after it installed and restarted it presented me with a pop up dialog that said to tap the home button to finish setting up iOS. It also turned on my Bluetooth (which was off) and turned on background app refresh (which was also off).

Please refer to the comments on the #2. It is possible that the iPhone 8 series can be updated to this version, but because I don't have an iPhone 8, I can't test it.

The changes I've made to this wiki are aimed at aligning its content with Apple's official release.

FYI, my first gen. iPhone SE – which is effectively a 6S, I believe – got the update to 15.7.3.
It also turned on my Bluetooth (which was off) and turned on background app refresh (which was also off).
ime, updates always turn on Bluetooth, which I never use; but thanks for reminding me :)

Background App Refresh remained off after my update ¯\_(ツ)_/¯

My phone is glitchy after this update. There was green/grey dimness to the screen and the phone is slower and has worse battery life. Safari seems to stall when loading pages now. My phone worked great on 15.7.2. I guess I’ll try a restore.

Did an ipsw restore using Finder to 15.7.2 while it’s still being signed. Things seem more or less ok again. I guess I’ll take another swing at it when 15.7.4 comes out.

Updated, thanks

Provide a photo to better illustrate what you experienced.

I already switched back to 15.7.2 because I wanted to do it before they stopped signing it. The colors look normal again and the glitches are a bit better. It was a subtle shift towards a more green/gray tint to the screen on the .3 update. /shrug

Perhaps it is a good idea to report this issue to Apple, since iOS 15 is only bug fixes and security updates in the future, they will not focus on iOS 15, and if there is a lack of feedback, this issue may not be fixed.

Is this just one case or has it been reported more often? I am a bit reluctant to update my iPhone SE zu 15.7.3 after reading this.

I kept my 6S at 15.7.2 for a few months because I had some weirdness when I first updated to 15.7.3. I later updated from 15.7.2 to 15.7.7 and its totally fine.
