Hello good people, :)

I'd like to have my Mac Mini (see sig) shut down automatically, after a certain period of inactivity. I can't find any settings for this in System Preferences. I know I can schedule certain times for shutdown and restart, but that's not what I want.

If it's not possible in the OS, is there a third party app that can do this?

(I think it's surprisingly difficult to find info on this matter. Or maybe my Google skills are just sub-par..)

I am not aware that you do this in macOS apart from logging off an user after a period of inactivity. There is a third patty product called Power Manager, which should allow you to do what you want.
