Strange, so it works on your side on Big Sur without any additional software? May I ask what device / adapter you are using? Maybe this is also connected to the PCI card itself.
I know, I was not expecting it to work. I have a highpoint 1701 and Evo 970 Plus 1TB.
No extra software other than OC 0.6.3. The only thing I changed with the OC config and kexts was adding innie to Lilu via the plugins method.

Ah, so you run OC "underneath", with Lilu and Innie? So yeah, I would count that as "additional software" ;)

Well, I guess thats something that might not work with a 7,1 ...

If there is interest in the community for the kext, I will make it available. However, to support other drives, particularly NVMe ones, I would need the names of PCI drives reported in System Information:

PNY CS900 250GB SSD
PNY CS900 500GB SSD
PNY CS900 120GB SSD

Running on dosdude1 patched Catalina (no opencore) on a 3,1 I'm bringing back to life.
I tried it with my 250 and no luck, so I'm assuming it's not in the list, but wanted to verify/request with this post.

Innie has been updated to version 1.3.0. This update brings an important change: Innie no longer requires Lilu. Version 1.3.0 has been tested on Catalina and Big Sur and should improve functionality on a wide variety of machines, including the 3,1 and 7,1 Mac Pro.

Actually, all drives should be detected. You may want to try with the latest version, which improves functionality with the 3,1.

Is Catalina therefore to be considered the minimum Mac OS version or is it likely to work with earlier versions despite the absence of testing. If so, what would you think this would be?

The new version most likely works with earlier versions as well. The concern was mainly Big Sur and its restrictions with kexts.

Thanks for the new version 1.3.0

I encounter a strange thing on cMP5.1 after installing "Innie.kext" in /Library/Extensions/ with these operations and command lines:
1 - I created a folder named "mount" in my "Home" folder then I mounted the snapshot (in order to make modifications) with:

sudo mount -o nobrowse -t apfs /dev/disk1s5 ~/mount

2 - I copied "Innie.kext" in /Library/Extensions/ then ran:

sudo chmod -R 755 /Library/Extensions/Innie.kext
sudo chown -R root:wheel /Library/Extensions/Innie.kext
sudo touch /Library/Extensions
sudo kextcache -u /
sudo kextcache -i /

3 - I allowed the kext addition from System Preference -> Security and Privacy

4 - Then I blessed the snapshot:

sudo bless --folder ~/mount/System/Library/CoreServices --bootefi --create-snapshot

5 - Finally restarted cMP5,1

I think mounting the snapshot shouldn't be necessary but I had another change to make in /S/L/CoreServices/CoreTypes.bundle
Now my NVMe SSD (Big Sur 11.1 20C69) is seen internal in Disk Utility but it still appears on the desktop despite this option being disabled in the Finder preferences.

I ran maintenance with Onyx and also deleted "com.apple.finder.plist" in ~/Library/Preferences/ in order to reset Finder preferences but the system disk still appears on the desktop as shown in the screenshot below.

And disappears from the desktop when I turn off the external drive option in Finder preferences.

It seems the NVMe always seen extern by the Finder. How is that possible?

Have you any idea about this?

I'm really not sure. Did you also allow the kext in System Preferences > Security & Privacy? How did you install Big Sur?

Yes I Allowed the kext in System Preferences --> Security & Privacy.

I made a clean install of Big Sur 20B29 on 15th November (and migrated my data from Mojave) then updated to 20B50 on November 20th and finally updated to 20C69 on December 14th

Innie.kext seems loaded by the system

New problem: Drive is now recognized as internal, however it's my BOOTCAMP Drive and now no longer bootable. Is there a way to make it bootable again OR do I need to give up and put it back in the regular HDD space?

The kext won't affect bootability. This is likely a Windows CSM thing. The easiest solution is to keep your Windows drive in one of the SATA bays.

Yeah, my windows SSD won't boot on pice but will in a drive bay.

The current release should be compatible with the Mac Pro 7,1.

Catalina users: please note that you may need to adapt the installation steps.

I have a MacPro mid 2010 I successfully upgrade my firmware to 144.0.0.0.0
I also install macos big sur on my PCIE NVMe drive with the help of micropatch
My porblem is that my PCEI drive shown as external i follow your post #9 instructions 3 time but after reboot my system crash and I reinstall again

My ssd information is
Samsung PM1725b enterprised ssd (nvme) picture is also attached

There are now.

The instructions have been updated for the latest version of Innie.

I also install macos big sur on my PCIE NVMe drive with the help of micropatch
Please note that the solution here can be hit or miss with patched installations.
