Just make sure you have a good tethered encrypted backup while on iOS 11. Or do a cloud back up then turn off auto backup so your phone won’t do one while on iOS 12.
You can roll back to the current release version anytime you want. IF you have an iOS 11 backup you will be able to use that file to restore once you’ve reinstalled the current release iOS 11.
However, if your backup was overwritten by a backup while on iOS 12 then it won’t work during restore as it will tell you that backup will only work with iOS 12.
Hence the recommendation to do a tethered backup while on iOS 11. Then continue doing cloud backup for iOS 12. This way you’ll have a backup of each version of iOS.
