As I love Asian food, I am positively drooling, looking at these pictures.

Most of what you photographed I know (or have met on a menu) but what are crystal dumplings?

Most of what you photographed I know (or have met on a menu) but what are crystal dumplings?

crystal dumplings are a variation of har gow, except the wrapper is less translucent and more chewy. this particular dumpling had shrimp, king crab and pork as the filler. it was also fried as opposed to steamed, so the crystal reference is not obvious.

I can well imagine that frying rather than steaming a dumpling would transform or alter the texture; I've had dumplings of various kinds in central Asia, and always loved them, irrespective of how cooked and how served.

Shrimp king crab and pork would be delicious.

Meanwhile, what exactly is har gow?

Many thanks for the mouth-watering photos.

Yes, I have had the standard dim sum - which I love and cannot have enough of - but not the other, which looks very appetising.

In Kyrgyzstan, they have wonderful dumplings served in a broth, and also steamed or fried served with a sauce or two. Other central Asian countries offer similar delights.

Georgia (in the Caucasus) also has a stunning steamed dumpling dish - khinkhali - yum.
