You are not dropping the image, you are dropping a link to that image on the server it resides. If you delete that image on the server, it's gone from mail.
So if I dropped the image in Preview, then saved it with a filename of my choice to say my iphoto Library, does it still disappear if the link to the original is broke?
inquiring minds gotta know.:)

Trackpad gesture video previews are now updated for El Cap with the default wallpaper in the background.

The funny thing is though they aren't cropped correctly so there's a small bit of keyboard showing in an awkward position.
Still not fixed in GM. Also, the wallpaper still reflects Yosemite when going to Sys Prefs > Desktop/Screensaver > Hot Corners, but is properly El Cap in Mission Control. See screenshots.

Kinda embarrassing and sloppy of Apple to not have those fixed in the GM.

Trackpad Gestures have indeed been updated:

However, much to my surprise, Apple is inconsistent with one thing: The "Mission Control"-version of "Hot Corners" shows El Capitan, the "Desktop & Screensaver"-version of it shows Yosemite.

One thing i noticed that's seemingly disappeared is the ability to secure erase media in Disk Utility. You can erase stuff, but you can't overwrite even with a single zero pass. Unless I'm missing something...?

Arguably this isn't needed if we all encrypt our disks. First-run setup of El Cap now automatically checks that box for you.

I'd like to know this, too. iCloud would be a bad deal for me. I want to use CalDAV and IMAP. But I think apple is not so stupid and cancels CalDAV and IMAP support. Many companies need this protocols and it's a plus for OS X and iOS to support that with the default apps.

Notes does use iCloud rather than IMAP now, however the Notes app does still support the other protocols for other account types.

There's still several minor UI issues with the GM, adding onto that wallpaper consistency. The ticks in drop down menus are not consistent; in System Preferences and app preferences the old tick style is used, whereas in the menu bar and other places the new Yosemite tick is used. This is very minor but it makes no sense, and I'd really expect things like this to be polished with Apple. I've reported it and they've said this is (weirdly) by design.

Additionally, the Weather, Stocks and World Clock Today extension icons are not consistent and look like placeholders. They've remained the same since PB2 as far as I can remember.

Has anybody else noticed this? In the GM Candidate you can swap what happens when you swipe in Mail, so that you can archive rather than delete! Yay!

Cool. I actually did a feature request for this, but never really looked for the option in the preferences. It may have been there before the GM Candidate, but glad to see it there now regardless.

Have they added an option to switch primary functionality on the green traffic light button yet?

Secure erase is only available for unencrypted disks. There will be a separate button in the Erase panel.

I've updated to 10.11.1 and still getting these grey screens every 30 minutes or so! I'm struggling to even get my iMac back on after them. Just get a black or grey screen after the initial bong noise! It seems completely broken! Does anyone know a resolution to this or having the same issue?

See I didn't make the upgrade to El Capitan (from Yosemite) until the GM seed was released, and didn't opt for the 10.11.1 beta for this reason. The best thing I can suggest is re-installing El Capitan GM from the Recovery Partition.

Sorry I realised I posted this in the wrong thread, but I was actually getting this problem from the GM as well... none of the other beta's but appeared in the GM and was hoping that 10.11.1 would correct this. But obviously not.

Anyone else seeing this in the privacy tab of the 'security and privacy" in system preferences? Two lines in the location services...

Just a bug. Sounds like something's not registered correctly

Similar to this one in Mail's preferences:
