I'm a patient U.S. based Mac user. My MP7,1 was ordered yesterday and is estimated to be delivered late Jan to early Feb 2020. It's a 12 core, basic stock 32 GB RAM, 4TB SSD, Afterburner, Promise J2i. The J2i to be delivered Monday Dec 16. The J2i can accommodate two 12 TB SATA spinners giving the MP6,1 an internal 24 TB for data storage capacity. Will be using Apple's TB3-to-TB2 adapters for connecting to Apple 27" Thunderbolt displays.

Hmm..I ordered on 11th and it's coming by dec 24 to jan2...
Well, I presume its because of my BTO configuration and possible one or more items (such as 4 TB SSD, Afterburner and wheels or that the 12-core is in short supply) that causes a delay beyond your MP7,1 configuration delivery....

My configuration is....

Mac Pro​
With the following configuration:
3.3GHz 12‑core Intel Xeon W processor, Turbo Boost up to 4.4GHz
32GB (4x8GB) of DDR4 ECC memory
Radeon Pro 580X with 8GB of GDDR5 memory
4TB SSD storage

You can disable the T2 security stuff and boot from any device you want.. I have read through the manual for the MP has a QR code that loads the manual. The one that comes with it is all but useless. I am just about to power up the machine.. I have installed the Pegasus J2i, with two SATA drives.
