Unpairing and pairing as a new device usually solves just about any bug that is specific to you and not widespread. It's a PIA, but it works. Glad you got it resolved.Update!!!

It was officially a bug. And it’s gone! Finally!
Once I had a problem with my old Apple Watch S6 (I don’t even remember what problem it was) and the support recommended doing it, reinstalling as a new device. I kept this advice for life lol.

Double click the crown should bring up a list of last used apps which you can scroll and go to or swipe off to force close.
Since 10.4 you only have half a second to react after which id s defaults to the last showing.
Anyone else?
